"Busy kitchen" Michael Norman washes dishes while Jonathan Hoge springles flower over dough in the kitchen of MayDay Cafe. "For a small kitchen, we can make a lot," said Norman, who has been at MayDay for 11 years. The crew churns out croissants, focaccia, cookies, scones muffins, and bread in small, continuous batches and use more than 600 pounds of flour each week.
